This sort of analysis is all very well but there is a secondary question, Is the consumer
interested? Many authors have examined the rise of the ethical consumer. Newholm and Shaw (2007) provide a very good overview of many of the issues. There seems to have been a rise in ethical consumption in the late twentieth century, of which green consumerism can be seen to be a part. In terms of food, this has been written about extensively by authors such as Atkins and Bowler (2001), Blythman (1996), Germov and Williams (1999), Fearnley-Whittingstall (2006), Mepham (1996), Schlosser (2001), Smith (1994) and Wilson (2008). Although there is considerable debate as to the nature and long-term commitment of individuals to consuming in a more sustainable way, there is a consensus that consumer perceptions are changing and with this in mind a series of strategic questions need to be addressed.
