Coffee can be distinguished into two types namely coffee Arabica and robusta coffee. In some areas in Indonesia encountered coffee spice. Spice coffee is a blend of Arabica or robusta coffee beans by using the addition of spices – spice such as ginger, red ginger, galingale, black pepper, cardamom, cumin, and cinnamon. Spice coffee is meant to enhance the taste of fresh coffee and warm. In the Spice coffee contains compounds – compounds such as caffeine and essential oils. The purpose of this research is to analyze the compounds – compounds in coffee. Methods can be used namely HPLC for analyzing caffeine and GC – MS to analyze the essential oil.
