An aqueous phase was prepared by dispersing 0.5
wt% whey protein isolate and 0.02 wt% sodium azide in
distilled water and stirring for 1 hour to ensure complete
dissolution of the protein. An oil-in-water emulsion was
prepared by homogenizing 10 wt% soy bean oil with
90% aqueous phase in a high-speed blender (M133/
1281-0, Biospec Products, Inc., ESGC, Switzerland)
followed by three passes at 5000 psi through a highpressure valve homogenizer (APV-Gaulin, Model MiniLab 8.30H, Wilmington, MA). A series of 0.05 wt%
emulsions with dierent CaCl2 concentrations were
prepared by diluting the 10 wt% emulsion 250-fold
using distilled water containing dierent calcium chloride concentrations
