Garut (Maranta arundinaceae, L) merupakan salah satu tanaman sumber karbohidrat alternatif. Selain digunakan untuk pangan, Umbi garut juga digunakan sebagai bahan pembuat bioetanol, probiotik, dan mempunyai potensi mencegah penyakit jantung koroner, melalui mekanisme penurunan kolesterol dalam darah.
Pada penelitian ini dilakukan analisis kadar gula dalam ekstrak Umbi garut dengan menggunakan metode Dinitrosalisilat yang diperoleh dari 3 daerah. Uji kualitatif yang dilakukan untuk karbohidrat adalah Uji Molisch, Benedict, Barfoed, dan Kromatografi Lapis Tipis. Kadar gula pereduksi ditetapkan dengan metode Dinitrosalisilat (DNS) menggunakan Spektrofotometer UV-Vis. Data kadar yang diperoleh dianalisis secara statistik dengan Uji Kolmogorov Smirnov, Uji Levene, dan Uji LSD dengan taraf kepercayaan 95%.
Hasil penelitian menunjukkan bahwa Umbi garut mengandung gula pereduksi. Kadar gula pereduksi dalam Umbi garut dari dusun Patehan, Gandu, dan Tritis berturut-turut ialah 0,3900 ± 0,0132 %; 0,2846 ± 0,0080 %; dan 0,5407 ± 0,0177 %. Uji statistik menunjukkan bahwa ketiga Umbi Garut dapat mewakili populasi (terdistribusi normal), varian data yang homogen serta memiliki kadar gula pereduksi yang berbeda signifikan dengan kadar Umbi garut paling tinggi dari dusun Tritis.

Arrowroot (Maranta arundinaceae, L) is one of the alternative sources of carbohydrate crops. Besides being used for food, Tubers arrowroot is also used as an ingredient makers bioetanol, probiotics, and has the potential to prevent coronary heart disease, through the mechanism of decrease in cholesterol in the blood.This research was conducted on the analysis of the levels of sugar in the extracts of Tubers arrowroot with using the method Dinitrosalisilat which is obtained from the 3 regions. Qualitative test performed for carbohydrates is Molisch Test, Benedict, Barfoed, and Thin Layer Chromatography. Reducing sugar levels are set with the method Dinitrosalisilat (DNS) using UV-Vis Spectrophotometer. Data obtained levels were analyzed statistically with the Kolmogorov Smirnov Test, test, Test and Levene LSD with the level of confidence of 95%.The results showed that the Tubers arrowroot contain reducing sugar. Reducing sugar levels in that arrowroot Tubers from Hillbilly Patehan, Gandu, and the parking lot in a row was 0,3900 ± 0,0132%; 0,2846 ± 0,0080%; and 0,5407 ± 0,0177%. Statistical tests show that the three Tubers Arrowroot may represent a population (normally distributed) homogeneous data variants, as well as having a different reducing sugar levels significantly with the highest levels of garut Bulbs from the village parking lot.

Reducing sugar levels in tubers of arrowroot Patehan hamlet, Gandu, and Tritis row was 0.3900 ± 0.0132%; 0.2846 ± 0.0080%; and 0.5407 ± 0.0177%. Statistical analysis showed that the three tubers Garut can represent the population (normally distributed), variants of homogeneous data and have different levels of reducing sugars significantly with the highest levels of arrowroot tubers from the hamlet Tritis.
