Arrowroot (Maranta arundinaceae, L) is one of the alternative sources of carbohydrate crops. Besides being used for food, Tubers arrowroot is also used as an ingredient makers bioetanol, probiotics, and has the potential to prevent coronary heart disease, through the mechanism of decrease in cholesterol in the blood.This research was conducted on the analysis of the levels of sugar in the extracts of Tubers arrowroot with using the method Dinitrosalisilat which is obtained from the 3 regions. Qualitative test performed for carbohydrates is Molisch Test, Benedict, Barfoed, and Thin Layer Chromatography. Reducing sugar levels are set with the method Dinitrosalisilat (DNS) using UV-Vis Spectrophotometer. Data obtained levels were analyzed statistically with the Kolmogorov Smirnov Test, test, Test and Levene LSD with the level of confidence of 95%.The results showed that the Tubers arrowroot contain reducing sugar. Reducing sugar levels in that arrowroot Tubers from Hillbilly Patehan, Gandu, and the parking lot in a row was 0,3900 ± 0,0132%; 0,2846 ± 0,0080%; and 0,5407 ± 0,0177%. Statistical tests show that the three Tubers Arrowroot may represent a population (normally distributed) homogeneous data variants, as well as having a different reducing sugar levels significantly with the highest levels of garut Bulbs from the village parking lot.
