Kadar gula pereduksi ditetapkan dengan metode Dinitrosalisilat (DNS) menggunakan Spektrofotometer UV-Vis. Data kadar yang diperoleh dianalisis secara statistik dengan Uji Kolmogorov Smirnov, Uji Levene, dan Uji LSD dengan taraf kepercayaan 95%.
Hasil penelitian menunjukkan bahwa Umbi garut mengandung gula pereduksi. Kadar gula pereduksi dalam Umbi garut dari dusun Patehan, Gandu, dan Tritis berturut-turut ialah 0,3900 ± 0,0132 %; 0,2846 ± 0,0080 %; dan 0,5407 ± 0,0177 %. Uji statistik menunjukkan bahwa ketiga Umbi Garut dapat mewakili populasi (terdistribusi normal), varian data yang homogen serta memiliki kadar gula pereduksi yang berbeda signifikan dengan kadar Umbi garut paling tinggi dari dusun Tritis.
