Previously we reported the fermentation characteristics of meju,a Korean soybean fermentation starter, made of germinated soybeanunder dark condition (Choi et al., 2007). The present investigationwas undertaken to determine the comparative effect ofgermination of soybean under dark and light conditions on thequality characteristics of meju, a Korean soybean fermentationstarter, including the content of taste components and isoflavone.
