Soy germ has received much attention because of their abundanceof nutritional and biological components. To date, however,no data have been reported on GSG and their nutritive constituents.The germination of soy germ leads to improved nutritive valueand GSG provide macro nutrients with 39% protein, 10% lipidand 3.2% fibre. More meaningfully, GSG provide a potent sourceof biologically active compounds such as isoflavones, tocopherolsand free amino acids including GABA. GSG also contain a high percentageof polyunsaturated fatty acids such as linoleic and linolenicacids, and a considerable amount of free sugars includingoligosaccharides. Therefore, GSG are a potential enrichment sourceof bioactive and nutritional components for healthy food products.In addition, steaming and drying after germination may be benefi-cial by removing the bean flavour and increasing digestibility. Asshown in Fig. 9, steaming and freeze-drying or hot-air dryingmay be very helpful as GSG are incorporated into various healthyfood products.
