Arrowroot (Maranta arundinaceae, L) is one of the alternative sources of carbohydrate crops. In addition to food, bulbs are also used as an ingredient in garut maker bioetanol, probiotics, and has the potential to prevent coronary heart disease, through the mechanism of decrease in cholesterol in the blood.This research was conducted on the analysis of the levels of sugar in the extracts of Tubers Arrowroot. Arrowroot is obtained from 3 regions, using the Dinitrosalisilat method.Qualitative test performed for carbohydrates is Molisch Test, Benedict's Barfoed, and Thin Layer Chromatography. Reducing sugar levels are set with the method Dinitrosalisilat (DNS) using UV-Vis Spectrophotometer. Data obtained were analyzed statistically with the Kolmogorov Smirnov Test, test Anova, Kruskall Wallis Test and with confidence level of 95%.The results showed that the Tubers Arrowroot contain reducing sugar. Statistical tests show that the three Tubers Arrowroot may represent a population (normally distributed) homogeneous data variants, as well as reducing sugar levels has a different significance.
