Garut (Maranta arundinaceae, L) merupakan salah satu tanaman sumber karbohidrat alternative. Selain digunakan untuk pangan, umbi garut juga digunakan sebagai bahan pembuat bioetanol, probiotik, dan mempunyai potensi mencegah penyakit jantung koroner, melalui mekanisme penurunan kolesterol dalam darah.
Pada penelitian ini dilakukan analisis kadar gula dalam ekstrak Umbi Garut. Garut diperoleh dari 3 daerah, dengan menggunakan metode Dinitrosalisilat.
Uji kualitatif yang dilakukan untuk karbohidrat adalah Uji Molisch, Benedict, Barfoed, dan Kromatografi Lapis Tipis. Kadar gula pereduksi ditetapkan dengan metode Dinitrosalisilat (DNS) menggunakan Spektrofotometer UV-Vis. Data yang diperoleh dianalisis secara statistik dengan Uji Kolmogorov Smirnov, Uji Anova, serta Uji Kruskall Wallis dengan taraf kepercayaan 95%.
Hasil penelitian menunjukkan bahwa Umbi Garut mengandung gula pereduksi. Kadar gula pereduksi dari daerah ...........................berturut-turut ialah 0,2152 %; 0,1874 %; dan 0,3552 %. Uji statistik menunjukkan bahwa ketiga Umbi Garut dapat mewakili populasi (terdistribusi normal), varian data yang homogen serta memiliki kadar gula pereduksi yang berbeda signifikan.

Arrowroot (Maranta arundinaceae, L) is one of the alternative sources of carbohydrate crops. In addition to food, bulbs are also used as an ingredient in garut maker bioetanol, probiotics, and has the potential to prevent coronary heart disease, through the mechanism of decrease in cholesterol in the blood.This research was conducted on the analysis of the levels of sugar in the extracts of Tubers Arrowroot. Arrowroot is obtained from 3 regions, using the Dinitrosalisilat method.Qualitative test performed for carbohydrates is Molisch Test, Benedict's Barfoed, and Thin Layer Chromatography. Reducing sugar levels are set with the method Dinitrosalisilat (DNS) using UV-Vis Spectrophotometer. Data obtained were analyzed statistically with the Kolmogorov Smirnov Test, test Anova, Kruskall Wallis Test and with confidence level of 95%.The results showed that the Tubers Arrowroot contain reducing sugar. Statistical tests show that the three Tubers Arrowroot may represent a population (normally distributed) homogeneous data variants, as well as reducing sugar levels has a different significance.
